Kibbe (also spelled kibbeh or kibbee) is a beloved dish across the Middle East and the Armenian table, made from finely ground beef, bulgur wheat, onions, and a careful blend of spices. At Salma’s Kitchen, it is our signature, and the dish people come back for.
What goes into kibbe?
Good kibbe is about texture as much as flavour, and it comes down to four ingredients worked together until they hold:
- Finely ground beef
- Bulgur wheat
- Grated onion
- A careful blend of hand-picked spices
Ours is shaped, then cooked so the outside turns golden while the inside stays tender and savoury.

Is kibbe eaten raw?
Some versions are. Kibbeh nayyeh, a Levantine specialty, is served raw, but ours is not. We shape our kibbe and cook it until the outside turns golden and the inside stays tender and savoury, which is the style most people know and the one our family has always made.
What is kibbe made of?
Finely ground beef, bulgur wheat, grated onion and a careful blend of spices, worked together until the mixture holds its shape. The texture matters as much as the flavour, which is why kibbe is traditionally made with more than one pair of hands around the bowl.
What does kibbe taste like?
